Understanding Celiac Disease and
Wheat – Gluten Sensitivity!


There is a lot of info out there today about wheat and gluten sensitivities.  But do you know the latest stats say that most people don’t know they are gluten and/or wheat sensitive let alone that they may have celiac’s disease, either the full blown version or the “lite” version?

Celiac disease is a digestive disease that damages the small intestine and interferes with absorption of nutrients from food. People who have celiac disease cannot tolerate a protein called gluten which is found in wheat, rye, barley (malt) and possibly oats. When people with celiac disease eat foods containing gluten, their immune system responds by damaging the small intestine. Specifically, tiny fingerlike protrusions, called villi, on the lining of the small intestine are lost. Nutrients from food are absorbed into the bloodstream through these villi. Without villi, a person becomes malnourished – – regardless of the quantity of food eaten.

Because the body’s own immune system causes the damage, celiac disease is considered an autoimmune disorder. However, it is also classified as a disease of malabsorbtion because nutrients are not absorbed. Celiac Disease is also known as celiac sprue, nontropical sprue, and gluten-sensitive enteropathy.

All of this can be very confusing if you are not on top of all the latest research.  Then you need to decipher who’s data is real and legitimate (without bias) vs who’s data is slighted because of conflicts of interest!  Listen to find out some facts about celiac’s disease and wheat and gluten sensitivities. I might add that when it comes to food, eat food in its purest form.  Find recipes that combine only wholefood ingredients. Find substances that are natural thickeners like Kuzu Root Starch or Agar Agar Sea Vegetable Flakes.  Stay away from corn starch and flour for thickening.  Experiment with your crock pot.  Cut up sweet potatoes in fry fashion and mix them in a bag of egg whites and salt.  Then baken them on a cookie sheet that is covered with a little coconut oil.  Bake at 400 degrees until desired crispness is obtained.  Find healthy, in-season, fruits and eat them for dessert.  Baked apples are wonderful and there are recipes galore.  AND baking apples (cored) and sprinkling them with cinnamon leaves a wonderful smell throughout your home.  Natures room freshener for me!  Listen in for more information and shared conversation from participants…..

  3. Grain Brain – Book written by David Perlmutter, MD.  This isn’t just about wheat either.  The author dives into how grains affect our brains especially later in life in the form of dementia.  Again, there is also a section devoted to celiac disease.
  4. Celiac Society – Website – This site was put together by a mom with celiac disease running in her family.  Beware of websites that are backed by self-serving drug or food manufacturing companies. You want sites and information that benefits the reader and not the company or person’s pocketbook!   www.celiacsociety.com

12114_10152080644434130_927587039_n“Whenever you find yourself on the side of the majority, it is time to pause and reflect.” Mark Twain.  I love that quote. Mark was a wise man. I reflect daily on the plight of health in America today. I reflect on what the pharmaceutical industry dishes out in the name of health with the use of synthetic drugs. I reflect on what the bio-tech giants are making in their labs and expecting us to eat without a thought. I reflect when a doctor expects me to “cut out” a body part that is giving me problems insisting it is the only way. I reflect when industry big wigs suddenly become those in charge of guarding the hen houses of agencies such as the FDA, the AMA, the CIA, and the EPA, to name a few. I reflect when political giants are sitting on the boards of industrial, pharmaceutical and medical companies or are receiving money for anything even remotely related in support of those companies. I am always reflecting, always paying attention to those that put profits ahead of health.

Today I find myself in the minority of people that are taking their health into their own hands. I put my health ahead of profits. I put what food goes into my body ahead of the bottom line. I refuse to take substances that do not repair my body but instead cover up the issues. You can’t cover up or cut out an issue. It will just move from one place on to the next.

I have chosen to put my great health and wellness in the hands of local farmers for my food source.  For my health care needs, the New Medicine Foundation is my number one choice.  Dr. Edward W. Pearson and the team at NMF are ever present and leading the way, changing the face of medicine.

What is your why?  My why centers around health because I want to help people and share information that could very well save their life.
