Understanding Celiac Disease and
Wheat – Gluten Sensitivity!


There is a lot of info out there today about wheat and gluten sensitivities.  But do you know the latest stats say that most people don’t know they are gluten and/or wheat sensitive let alone that they may have celiac’s disease, either the full blown version or the “lite” version?

Celiac disease is a digestive disease that damages the small intestine and interferes with absorption of nutrients from food. People who have celiac disease cannot tolerate a protein called gluten which is found in wheat, rye, barley (malt) and possibly oats. When people with celiac disease eat foods containing gluten, their immune system responds by damaging the small intestine. Specifically, tiny fingerlike protrusions, called villi, on the lining of the small intestine are lost. Nutrients from food are absorbed into the bloodstream through these villi. Without villi, a person becomes malnourished – – regardless of the quantity of food eaten.

Because the body’s own immune system causes the damage, celiac disease is considered an autoimmune disorder. However, it is also classified as a disease of malabsorbtion because nutrients are not absorbed. Celiac Disease is also known as celiac sprue, nontropical sprue, and gluten-sensitive enteropathy.

All of this can be very confusing if you are not on top of all the latest research.  Then you need to decipher who’s data is real and legitimate (without bias) vs who’s data is slighted because of conflicts of interest!  Listen to find out some facts about celiac’s disease and wheat and gluten sensitivities. I might add that when it comes to food, eat food in its purest form.  Find recipes that combine only wholefood ingredients. Find substances that are natural thickeners like Kuzu Root Starch or Agar Agar Sea Vegetable Flakes.  Stay away from corn starch and flour for thickening.  Experiment with your crock pot.  Cut up sweet potatoes in fry fashion and mix them in a bag of egg whites and salt.  Then baken them on a cookie sheet that is covered with a little coconut oil.  Bake at 400 degrees until desired crispness is obtained.  Find healthy, in-season, fruits and eat them for dessert.  Baked apples are wonderful and there are recipes galore.  AND baking apples (cored) and sprinkling them with cinnamon leaves a wonderful smell throughout your home.  Natures room freshener for me!  Listen in for more information and shared conversation from participants…..

Following is my diary for the week:

04/14/16 – I’m still in NJ caring for my dad.  I am maintaining the paleo way of eating for the most part BUT am not 100% true.  My dad won’t eat paleo and carbs are the mainstay of his diet.  BUT I am still feeling great and my cloths are getting looser.  I will be glad when I am home and back in a nurturing environment.

04/14/16 – Skipping breakfast today except for a small amount of ham that I ate this morning so that I was able to take my supplements.  After reviewing the best times to eat the “paleo” way, it seems that our ancestors spent the day hunting and gathering and then prepared their meal in the late afternoon or evening, consuming all that they gathered in one sitting. I have decided that I will let my body dictate how I eat and as long as I am not hungry, I won’t force myself.  I will instead eat when I am substantially hungry and will also monitor my ketone levels.  I now show trace amounts of ketones in my urine and hope to increase that to moderate by the weekend.

04/10/16 – Home at last.  It will take me a couple of days to rest and re-acclimate but boy am I glad to be home.  I need to shop and get back to preparing meals as per the paleo way of eating. I also got my ketone test strips in so once I’m back in the game I will be able to monitor my progress.

04/11/16 – I am getting by bare bones with what I have in the house to eat. I really need to get to the store but am swamped with work and playing catch up with mail, etc here at home.  Hopefully tomorrow or Wednesday will see me caught up and back on track.  I do feel great though.  I have no desire for carbs, sugar or eating poorly or over eating for that matter.  Eventually I will not have a problem with eating once per day and I have decided that this will be my end goal when it comes to food consumption.

Following is my diary for the week:

03/30/16 – I am still traveling and am now staying with my dad in New Jersey.  I did another cold bath today.  Got my body temp down to 56 degrees.  Spent 40 minutes in the tub.  I have to say that it is refreshing when I get out and get dressed and move around.  Very energizing.  I am sleeping very soundly at night, better than usual.  All in all I am liking the experience.

03/31/16 – Same as yesterday.  Had dinner out with a friend.  Not really noticing weight loss but I am also not paying attention to diet as I would if I were home.  It has been difficult to cook for my father while cooking for myself as he is a big sauce type of guy.  Like creamy foods like mashed potatoes and gravy, pot pies, thicken sauces, stuffing, etc.  I am converting him as best I can but at 84 years of age, he really doesn’t care about his health.  He said he has made it this far and I really can’t argue with him.

04/01/16 – No bath today but I lost 5 pounds this morning.  Amazing right….. April Fool.  LOL.  Sorry couldn’t resist.  Not much to report today.  I still don’t have a scale so I can’t report on weight.  Had some leftover chicken soup for breakfast and then a salad and a piece of fish for dinner.  No cravings, no hunger to speak of.  All is going well in that department.

04/02/16 – Continue to eat paleo. Protein rich breakfast within 1/2 hour of rising.  No more food until dinner.  I don’t have access to a scale so I am unable to weigh in.  Will be back home on Wednesday so I’ll be able to get back in the swing with weigh ins then.

04/03/16 – Skipped breakfast today as I was going to a family function at 3:00pm. I wasn’t that hungry either so all worked out.  My family was there so I was on my best behavior when it came to food choices at an Italian restaurant.  I ordered flounder stuffed with crabmeat. It came with steamed veggies and a bit of rice.  I did have a little cheesecake for dessert to celebrate my uncle’s 87th birthday and I had a glass of wine.  That was it.  No bread, pasta.  Felt full and satisfied and didn’t eat anything later on.  I really think my leptin has been significantly reduced.  Testing in a few weeks will verify this.

04/04/16 – I have been studying the Paleo information I have (I have gotten several books on the topic) and all are saying that eating one meal a day is part of the program.  Interesting to think about and I might give it a try and see what happens.  Right now my focus is on reversing my out of wack leptin issues but once that is done, I’ll consider other options for a new way of eating.  I am going to devote this coming Wednesday night’s teleconference to talking about the Paleo way and how often one should eat.

3/23/2016 – Let’s Get The Weight Off Forever – Meet Up March 23, 2016

Recommendations for Reading & Watching:

  1.  EPI – Paleo Rx – The Prescription for Disease Reversal and Optimal Health by Dr. Jack Kruse – I have been told that this book is very technical and difficult to read for some. If you are not a detail person and just want the procedures, tune into these blogs and skip purchasing the book.

Following is my diary for the week documenting my routine and the results:

03/23/16 – I am still traveling and am now staying with my dad in New Jersey.  Trying to do the cold baths requires that I do a little shopping to equip the bathroom.  That won’t happen until the weekend.  I have done some shopping and continue to eat Paleo per the Epi-Paleo Rx book I mentioned last week. All is going fine. Need to shop and start to prepare foods again. Will be getting my father into the program as best I can.  84 is not a good time to start teaching an old dog new tricks.

03/24/16 – I am itching to do some more cold thermo baths.  Believe it or not, I am missing them.  I shopped today and will be preparing healthier meals tomorrow.  I need to get a new crock pot.  They seem to be an essential tool for ease in preparing healthy paleo meals.

03/25/16 – I am up by 7:30 to 8am now. Eating within a half hour of rising and not eating again until dinner.  Feeling very good although not getting any exercise to speak of.

03/26/16 – I was able to get to Bed, Bath and Beyond to pick up the over-flow restricter for the bath tub.  I was able to do the cold therm bath after dinner.  The faucet bath water was around 48 degrees. The tub was around 50 and I was able to get my skin temp to 56.  All was fine but when I got out and dried off, put on my PJ’s and socks and slippers, I found that I was unusually cold.  I believe it was due to the fact that I was not moving around.  It was bedtime.  I did go to bed a bit early but found that I was unable to get warm.  I had a restless sleep and won’t be doing that again. I think in the future I will do these cold thermo baths in the morning after breakfast.

03/27/16 – It is Easter – prepared a paleo dinner but also be prepared mashed potatoes for my dad (his favorite with gravy) so I will be indulging in that carb dish and will also be having strawberry short cake for dessert.  It is a holiday so I tend to forget strict adherence to diet, opting to remember the holiday and enjoy it without guilt.  Mission accomplished although I did have my usual high protein breakfast in the morning and we ate a bit later in the day so I only consumed 2 meals as I usually do. No negative side affects that night.  All is well.

03/28/16 –  All is still going well.  I had a breakfast engagement at 9:00am so I was unable to do a cold thermo bath. I will postpone that til tomorrow morning.  Back to normal eating paying attention to eating good quality protein and fat and a few veggies at dinner.  I tend to eat high protein at breakfast, especially with the cold thermo baths in the plan.

03/29/16 –  I had eggs and sausage for breakfast although I did not eat to capacity. I was not in the mood.  BUT I did do a morning cold thermo bath after breakfast.  This approach is much more tolerable for me.  I spent 40 minutes in the tub which was filled to capacity. I got my body temp to 56 degrees.  I was not cold in the water at all. It is actually amazing to me. I did wash my hair first in tepid water in the show and then started to fill the tub with cold water. Once I get 3 or 4 inches of water filling it, I switch to just cold water.  When I start out it is cold but not pure cold – I’d guess the water is approx 65 degrees for the first few inches.  My body tends to acclimate better doing that.  I am not a fill up the tub with cold water and get in kind of person. You can but I like the slower approach letting my body adjust a little at a time.  Once done, I dressed for the day and then went to work at my computer.  I was up and down though and active. It was much better this time around. I will continue with morning cold thermo baths after breakfast.

Following is my diary for the week documenting my routine and the results:

03/16/16 – I was at a charity event last night so I didn’t get a chance to eat dinner other than to have 2 small appetizers that were being passed around.  Once contained cheese with a bread crumb topping – deep fried and the other was also deep fried and contained a wheat coating.  I had two of each and called it a night for eating. I also had 2 white wine spritzers containing about one ounce of wine each and topped off with club soda.  I wasn’t really hungry, came home and went to bed. I was exhausted from never going to bed the night before and was in bed by 10pm.  I also didn’t want to eat so close to bed time.  Since I wasn’t that hungry, I just drank a glass of water and went to bed.  I felt fine this morning but was a bit on the hungry side.  I had an omelet for breakfast (no potatoes, toast or cheese).  That was at 9:00am.  It is now 6:00pm and I am going to dinner with friends at 7:00pm.  Unlike my past, I will be fine until I am able to eat dinner that will consist of seafood and salad.  My breakfast was all protein (required for reversing leptin resistance) so my dinner will contain some veggies. Since I’m traveling, I won’t be able to do a cold thermo bath until Saturday evening.

03/17/16 – I’ve been vacationing and enjoying my friends and not paying much attention to food.  I am not able to eat as promptly as if I were home as there are others that are joining me so I have to wait.  I am still maintaining my 2 meal a day schedule.  I am still eating a high protein breakfast and find that I am not hungry until 7 or 8pm so all is good.  No sugar/starch cravings either.  All is good.

03/18/16 – Again, enjoying my time off but not paying much attention to food intake.  Same as above with regard to eating, etc.  I can tell I have not gained any weight and I’m easily maintaining what I have loss thus far.

03/19/16 – Ditto on the above.

03/20/16 – Ditto on the above.

03/21/16 –  All is still going well.  Because of the traveling I am doing, I haven’t been able to get the food I need as easily.  I’m not eating the wrong foods as I have no desire.  But I am also not eating as I would like to be.  As a result, my energy levels are off a bit and I’m just not feeling 100%.  I know this will change by Wednesday though.  Remember life is a journey.  Don’t fret over the small stuff and what I am experiencing in the big scheme of things, really is small stuff.

03/22/16 –  Well it is happy birthday to my dad.  I arrived today and he was very surprised.  But like I said above, due to traveling I haven’t been eating as well as I would like.  I did stop at Wendy’s while driving and ordered a double burger.  I removed the bread and just at the meat.  That was satisfying to my hunger and lasted me til dinner.  We had a birthday dinner for my father and I ate 2 small bites of his cheesecake.  No other desserts.  I don’t miss dessert, don’t crave it – absolutely no sugar or carb cravings.  What a great feeling.  Tomorrow I will get back to cold thero baths I hope.  If I am unable to do one of Wednesday then I will do one on Thursday and get back into the swing of it all.
