Unfortunately, wheat is both a weed and disease by my standards today. Wheat is not the same as it was when I was a little tot. It can’t be when it has been tortured to resist fungus, forced to grow more quickly and made to produce higher yields in the industrial bread baking industry. I was shocked to learn that 50 to 60 years ago, wheat contained only five percent gluten, naturally. Today that figure has risen to 50 percent. Wow baby. Think there is any correlation between that statistic and the increase in disease today? The way I see this, wheat has become a weed, and the precursor to disease. And to think, it used to be the staff of life.

…what I was hearing these days was actually true but apparently it is … statin drugs are the most profitable drug coming out of pharmaceutical companies. Drugs like Crestor, Baycol, Lipitor and Zocor are a few of the names of these deadly drugs. Doctors are prescribing them to lower cholesterol levels and they are working. The problem comes from not finding out why cholesterol levels have risen and instead medicating the issue away. What people don’t think about is
this was as big a deal as it is turning out to be. I had my own experience with wheat as many of you know. My diagnosis was arthritis but in reality, my real issue was a “wheat” allergy. I stopped eating wheat and the arthritis pain went away. Eventually, what I discovered was that I was allergic to more than just wheat; I was also sensitive to gluten. But let’s just stay on the topic of wheat and save gluten for another day.
I am shocked by what the latest reports are finding out about wheat. They are now calling wheat the “perfect, chronic poison” or at least that seems to be the phrase that Dr. William Davis has coined! He is the author of the book entitled “Wheat Belly”. Imagine that, a cardiologist is publishing a book that is all about the world’s most popular grain … wheat. You don’t need to be a rocket scientist or a doctor to know we are in trouble when you find out that the “new” wheat we are consuming today was created in the 60’s and 70’s through the power of genetic research. The doctor calls this new wheat “this thing”. Dr. Davis states “This thing has many new features nobody told you about, such as there’s a new protein in this thing called gliadin. It’s not gluten. I’m not addressing people with gluten sensitivities and celiac disease. I’m talking about everybody else because everybody else is susceptible to the gliadin protein that is an opiate. This thing binds into the opiate receptors in your brain and in most people stimulates appetite, such that we consume 440 more calories per day, 365 days per year.” It seems to me that the powers that be will go to any means to make you fat because fat people make the powers that be a lot of money and money equals power!
The good news is this; we can make a change and go back in time. This is one time in our history that I feel we should be moving back to and not making progress toward something else when it comes to the production of food and in this case, specifically wheat. It may not be economically feasible because it yields less per acre, however, I am hearing a buzz that there is a trend happening and it is all great news for my ears. Education is working as it always does. People are starting to turn away from wheat and are seeing a reduction in body weight and improved health. This is big if you ask me although you won’t hear about it on the 5 o’clock news.
Dr Davis is quoted as saying “If three people lost eight pounds, big deal” … “But we’re seeing hundreds of thousands of people losing 30, 80, 150 pounds. Diabetics become no longer diabetic; people with arthritis having dramatic relief. People losing leg swelling, acid reflux, irritable bowel syndrome, depression, and on and on every day.”
Here we are back to the beginning again. No wonder I named my new book Coming Full Circle. I keep coming back again and again to the same issue and/or the same remedy, WE MUST EAT REAL FOOD. We must get back to cooking and/or preparing our own meals and eating lots of veggies and whole fruits and beware of wheat and things that are genetically modified. We must stop cooking with olive oil and eat it raw as it wasn’t meant for heating. We must stay away from wheat, corn, soy and canola as they have been too heavily affected by the genetic modification trend. Too much hanky panky has gone on with the production of many foods and we are beginning to see the fruits of labor of corporate America and it isn’t pretty.
I keep hearing over and over again to stay away from grains and you’ll see the weight melt off your body. Stick with veggies and meat, poultry and fish proteins and you’ll be lean and healthy. Dr. Davis seems to be thinking along those lines as well. He said, “All that literature says is to replace something bad, white enriched products with something less bad, whole grains, and there’s an apparent health benefit – ‘Let’s eat a whole bunch of less bad things.’ So I take…unfiltered cigarettes and replace with Salem filtered cigarettes, you should smoke the Salem’s. That’s the logic of nutrition, it’s a deeply flawed logic. What if I take it to the next level, and we say, ‘Let’s eliminate all grains,’ what happens then? That’s when you see, not improvements in health, that’s when you see transformations in health.”

a fasting blood sugar level over 100mg/dl is considered a pre-diabetic condition. I didn’t realize how devastatingly close that is to 126mg/dl which is the diagnosis number for diabetes. I also didn’t know that numbers much lower than these are what start the process of illness in the body. That’s right, blood sugar levels determine what your risk is for heart disease, cancer, kidney and nerve damage as well as dementia and stroke.

We need to wake up and start making major changes in this country if we are going to live long and prosper. Otherwise, who will be caring for us as the year’s progress and we get sicker and sicker and sicker and sicker. And I have to ask myself what our quality of life will be like then? Do you really want to live in a body that is in constant pain and rotting from the inside out? Well, I guess in the big scheme of things, you won’t even know it because dementia will set in and you’ll be clueless? Right? Hummmm now that is something to ponder and something we won’t know until we get there.
