The “Yolks” on You!

IDKT (I Didn’t Know That) …

egg yolk…egg yolks were so nutritionally beneficial. Heck, I hear all the time to eat the whites of the eggs only and leave the yolks behind. Turns out that this just isn’t true. Yes, the white and the yolk are packed with vitamins B12, B6 and B9 (folate) but did you know that only the yolk has vitamins A, D, E and K as well? Seems silly to me to toss those nutrients down the garbage disposal. AND, I just learned that 90% of an eggs calcium is found in the yolk along with 93% of its iron content. In times when food prices are increasing and nutrition derived from our food is waning, you can bet I am going to utilize all that I can from the foods that I get, leaving all but the uneatable behind. OK, I won’t be eating the shells but you can bet the yolks are here to stay on my plate.

NYK (Now You Know) …

…you shouldn’t toss the yolks and that knowledge truly is power. Stay tuned for more hints, tips and suggestions from Coach D, Donna Appel and the gang at A Voice For Change.
